This year I was on a mission to get my girls eating more than just chicken nuggets and sausage, beans and chips. Guess what? We did it!!
We now eat five out of seven meals together, and I only cook one dish. Who would have known?!
This is one of our favourites, and it's super easy to make. I wouldn't exactly call it low cal, but it is delish. You can get all the ingredients from the international section of Tesco.
1 package lightly salted Doritos (do NOT use any flavoured ones)
1 1kg package of mince (ground beef)
1 large onion, chopped
1 tin chopped tomatoes
1 can refried beans
1 can mild enchilada sauce
grated cheese (I use a mix of mild cheddar and red leicester)
Crush the tortilla chips and place at the bottom on a 9 by 14 casserole dish. Brown the mince and onions, mix in tomatoes and cook for five minutes. Put on top of the crushed tortilla chips. Next spread on the refried beans and cover with the enchilada sauce. Sprinkle with the cheese. Bake at 170C (350F) for 30 minutes, or until cheese is bubbling. Serve with rice and salad.
